Shrimp Risotto

Ingredients:
2 lbs. tomatoes, peeled and seeded
1 glass dry white wine
1 cup rice
10 1/2 ounce small shrimps peeled and deveined
2 tablespoons olive oil
2 whole cloves
1 carrot, chopped
1 onion, sliced
salt to taste
parsley to taste

Directions:

  1. Purée the tomatoes in a blender or food processor.

  2. Heat the olive oil, then saute the onion and shrimps. Add the pureed tomatoes, carrot, salt and the cloves.

  3. Cook for 10 minutes, then add the wine and cook in low heat for around 10 minutes. If necessary, add some more water.

  4. When rice is done, garnish with chopped parsley.
