Shrimp Risotto
Ingredients:
2 lbs. tomatoes, peeled and seeded
1 glass dry white wine
1 cup rice
10 1/2 ounce small shrimps peeled and deveined
2 tablespoons olive oil
2 whole cloves
1 carrot, chopped
1 onion, sliced
salt to taste
parsley to taste
Directions:
- Purée the tomatoes in a blender or food processor.
- Heat the olive oil, then saute the onion and shrimps. Add the pureed tomatoes, carrot, salt and the cloves.
- Cook for 10 minutes, then add the wine and cook in low heat for around 10 minutes. If necessary, add some more water.
- When rice is done, garnish with chopped parsley.
