Some general information about Shrimps:
Prawn and scampi are terms generally used interchangeably with shrimp. Prawn refers to freshwater shrimp or large saltwater shrimp, scampi is often used by restauranteurs to describe shrimp cooked in butter and garlic. In United Kingdom, the term prawn is more common than the term shrimp, which in America is used ofter.

There are many species of shrimps, from cold-water, warm-water and freshwater. You can find it in many colors, including reddish- to light brown, pink, deep red, grayish-white, yellow, gray-green and dark green, and category of sizes as follow: colossal (10 or less per pound), jumbo (11-15), extra-large (16-20), large (21-30), medium (31-35), small (36-45) and miniature (about 100). Shrimp are available year-round and as rule, the larger the shrimp, the more expensive they are.

Shrimps are found shelled or unshelled, raw or cooked and fresh or frozen. When buying fresh shrimps, they should smell of the sea, not like ammonia (See our Buying Tips, and Handling and Storing Tips). You can also find in the marketplace a lot of shrimp products, including shrimp sauce, shrimp pasta and dried shrimps (commonly used in Asian cuisines).
