Some general information about Lobster:
There are many varieties of lobster around the world, including the Maine lobster and the European lobster.
However in the United States the most popular type of lobster is the Maine lobster, also referred to as American lobster,
which resides in the Atlantic coast of the northern United States and Canada. The European variety is very similar to the
Maine lobster but the American variety is bigger and can be found in the Atlantic from Norway to Morocco, as well as in the
Mediterranean and South African waters.
Despite the variety, all types of lobsters have the same basic body. The greater part of meat is in the tail - which is the
sweetest part - and the two front claws, but smaller portions can also be found in the legs and torso. The larger the lobster
the greater the portions of flesh in the small legs and body.
Lobsters are sold fresh, which should be alive (see Seafood Buying Tips), frozen or already cooked. Fresh lobsters are
available year-round and have better prices during spring and summer. You can buy whole lobster but also only the tails.
