Tuna Rice Casserole

Suggestion: You can add some vegetables such as peas or carrots to the tuna-rice mixture.

Yield: 4 Servings

Ingredients:
1 cup brown or white rice
1 can (10 1/2 ounces) mushroom soup
1 can (6 1/2 ounces) light tuna, drained
1 teaspoon butter or margarine
1 1/2 tablespoon dry bread crumbs
2 ounces grated cheddar cheese (or more to taste)


Directions:

  1. Cook rice following package directions.

  2. Stir soup into rice.

  3. Mash tuna and stir into rice mixture.

  4. Spread butter over inside of 1 3/4-quart casserole; sprinkle breadcrumbs over butter.

  5. Pour tuna-rice mixture into casserole and sprinkele with grated cheese. Bake on middle shelf of preheated 375-degree oven 30 minutes.
