Tuna Baked Potatoes

Yield: 4 Servings

Ingredients:
2 cans tuna, drained
4 baking potatoes, cleaned
1/2 cup milk
1/4 cup margarine
1/2 cup parmesan cheese, grated
1/4 cup green onion, minced
1 teaspoon thyme
1 teaspoon dill
1 teaspoon salt
1 teaspoon pepper
1/4 cup frozen peas, thawed


Directions:

  1. Bake potatoes. When cool, cut in half and scoop out centers.

  2. Mash potatoes and beat in milk, margarine, cheese, onion and spices.

  3. Stir in tuna and peas. Spoon mixture back into hollowed out skins. Bake at 350 degrees for 20 minutes.
