Tilapia with Cucumber Sauce

Ingredients:
2/3 cup cucumber, chopped and seeded
1/2 cup radishes, chopped
1 teaspoon vegetable oil
2 tablespoons Tarragon vinegar
1/4 teaspoon dried tarragon
salt and pepper to taste
4 tilapia fillets (6 ounces each)
2 tablespoons butter

Directions:

  1. In a small bowl, combine cucumber, radishes, oil, vinegar, tarragon, salt and pepper. Mix well. Let stand at room temperature while preparing fish.

  2. Saute tilapia in butter in a large skillet over medium heat for two to three minutes on each side or until fish flakes easily. Transfer to serving plate.

  3. Spoon cucumber mixture over each serving. Serves four.
