Tilapia with Cucumber Sauce
Ingredients:
2/3 cup cucumber, chopped and seeded
1/2 cup radishes, chopped
1 teaspoon vegetable oil
2 tablespoons Tarragon vinegar
1/4 teaspoon dried tarragon
salt and pepper to taste
4 tilapia fillets (6 ounces each)
2 tablespoons butter
Directions:
- In a small bowl, combine cucumber, radishes, oil, vinegar, tarragon, salt and pepper. Mix well. Let stand at room temperature while preparing fish.
- Saute tilapia in butter in a large skillet over medium heat for two to three minutes on each side or until fish flakes easily. Transfer to serving plate.
- Spoon cucumber mixture over each serving. Serves four.
