Tagliatelle with Smoked Salmon and Green Asparagus

Smoked Salmon Risotto

Yield: 4 Servings

Ingredients:
12 ounces tagliatelle
12 fresh green asparagus, cut into 1 1/2-inch pieces
2 tablespoons butter
1 medium onion, finely chopped
7 ounces smoked salmon, roughly chopped
2/3 cup white wine
2/3 cup ounces heavy cream
Salt and pepper to taste

Directions:

  1. Cook the tagliatelle, according to package directions. Drain it and reserve.

  2. In a large saute pan melt the butter, add onion and sauté until soft. Add asparagus and saute for 1 minute.

  3. Pour in the wine, then reduce heat to low and simmer covered for 4-5 minutes.

  4. Add smoked salmon and heavy cream; warm gently.

  5. Add pasta to the pan and toss well to coat. Season to taste with salt and pepper. Serve immediately.
