| Spaghetti With Anchovies  Yield: 4 servings Ingredients: 13 ounces spaghetti 4 garlic cloves, finely chopped 3 tablespoons olive oil 10 salted anchovie fillets, rinsed and chopped 1 pound ripe tomatoes, peeled, seeded and chopped 5 ounces black olives, pitted and chopped 1 tablespoon capers, drained 3 tablespoons fresh chopped parsley 1 dash Cayenne pepper Salt to taste Directions: - Over low-medium heat warm the olive oil. Add garlic and sauté for 1-2 minutes.
- Add the anchovies to the pan and smash them, using a table fork. Add olives, capers, tomatoes and Cayenne pepper. Simmer covered for about 25 minutes. Stir once in a while and add some water if necessary.
- In the meantime, cook the pasta according to package directions. Drain it and reserve.
- Add pasta to the pan and toss well to coat. Season to taste with salt. Sprinkle with parsley and serve.
