Sole in Crab Meat Sauce

Yield: 2 servings

Ingredients:
4 fillets of sole
1 can condensed cream of mushroom soup
1/2 can milk
1 small can salad crabmeat
1 can salad shrimp (Optional)
Tabasco to taste
Grated Parmesan cheese

Directions:

  1. Mix condensed soup, milk, shrimp and crabmeat in a sucepan and bring to boil. Add Tabasco to taste - several drops.

  2. Place sole fillets in a well greased 9 inch square baking dish. Pour soup mixture over sole.

  3. Bake in a 350C degree oven for about 10 minutes or until sole is cooked.

  4. Sprinkle Parmesan cheese over the sauce, and broil until cheese is well browned. Serve over Basmati Rice with Chick Peas OR Coconut rice (see recipes bellow).


Basmati Rice with Chick Peas

Ingredients:
1 small onion, chopped
1 inch ginger root, grated
About 1 teaspoon cumin seed
1 cup basmati rice (well washed until water runs clear)
Cooking oil - to fry onion etc.
1/2 cup cooked chick peas

Directions:

  1. In a saucepan, fry the onion until tender, add ginger and cumin seed, cook for another 2 minutes.

  2. Add 1/2 cup boiling water to contents and reduce for 3 minutes at boiling point.

  3. Add drained washed rice, chick peas and 1 cup boiling water. Boil until rice begins to swell. Turn heat to minimum and cover well.

  4. Let stand for at least 20 minutes. Serve.


Basmati Rice with Coconut

Ingredients:
1 cup Basmati rice - well washed and drained
1 can coconut milk
1/3 can water

Directions:

  1. Bring coconut milk and water to boil. Add drained rice. Boil again until rice begins to swell. Cover. Turn heat to minimum and let stand for a least 20 minutes. Serve.
