| Smoked Salmon Risotto
 Yield: 4 Servings Ingredients: 1 onion, chopped 1 leek, chopped 2 cloves garlic, minced 2 tablespoons olive oil 2 cups Arborio rice 1 cup dry white wine 4 cups chicken broth 6 ounces smoked salmon, chopped 8 tablespoons grated Parmesan cheese Salt and pepper to taste Directions: - In a saucepan, bring broth to simmer. Reduce heat to low and cover to keep warm.
- In a large saucepan, heat olive oil and saute the onion, leek and garlic for 5 minutes.
- Add the rice and stir for 2 minutes. Add the wine and stir for 4 minutes.
- Add broth gradually, 1 cup at a time, and stir until liquid is absorbed. Cook until rice is tender. Season to taste with salt and pepper.
- Remove from heat and stir in salmon and Parmesan. Cover the pan and let rest for 4 minutes before serving.
