Smoked Salmon Risotto

Smoked Salmon Risotto

Yield: 4 Servings

Ingredients:
1 onion, chopped
1 leek, chopped
2 cloves garlic, minced
2 tablespoons olive oil
2 cups Arborio rice
1 cup dry white wine
4 cups chicken broth
6 ounces smoked salmon, chopped
8 tablespoons grated Parmesan cheese
Salt and pepper to taste

Directions:

  1. In a saucepan, bring broth to simmer. Reduce heat to low and cover to keep warm.

  2. In a large saucepan, heat olive oil and saute the onion, leek and garlic for 5 minutes.

  3. Add the rice and stir for 2 minutes. Add the wine and stir for 4 minutes.

  4. Add broth gradually, 1 cup at a time, and stir until liquid is absorbed. Cook until rice is tender. Season to taste with salt and pepper.

  5. Remove from heat and stir in salmon and Parmesan. Cover the pan and let rest for 4 minutes before serving.
