Ingredients:
1 pound unpeeled shrimp, heads on
7 ounces Brie cheese, cut into small dice
3 ounces butter
5 ounces onion, chopped
1/2 cup dry white wine
1/2 cup whipping cream
1 cup shrimp stock
2 ounces dried apricot, coarsely chopped
Lemon juice
Salt and pepper
Directions:
- Wash and clean shrimps. Peel them and prepare a stock with the shells and heads.
- Season peeled shrimps with lemon juice, salt and pepper. Set aside. Soak dry apricots in some hot water.
- Heat half of the butter and sauté onion. Add white wine and Brie cheese. Gradually pour in shrimp stock,
stirring constantly so the cheese melts. Stir in whipping cream. Season with salt and pepper. Set aside.
- In another frying pan, heat the rest of the butter and sauté shrimps. Stir in apricot (without the water) and
sauté for a few minutes.
- Pour in the sauce previously prepared. Correct salt if necessary.
