Shrimps and Scallops Newburg

Ingredients:
3/4 lb. fresh or frozen shrimp
3/4 lb. fresh or frozen scallops
1 (10 oz.) package frozen green beans
2 cups water
1 cup fresh mushrooms, sliced
2 tablespoons green onion, thin sliced
2 tablespoons margarine or butter
1/4 teaspoon salt
2 tablespoons all-purpose flour
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
1/2 cup nonfat dry powdered milk
1 beaten egg white
2 tablespoons dry white wine
3/4 cup soft bread crumbs
2 tablespoons grated Parmesan

Directions:

  1. Cook and drain green beans according to directions on package.

  2. Combine thawed shrimp, scallops and 1 cup water. Bring to boil, reduce heat, cover and simmer2-3 minutes until scallops and shrimp are opaque. Drain.

  3. In a skillet cook mushrooms and green onion in 1 tablespoon margarine about 5 minutes or until tender. Stir in flour, salt, nutmeg and pepper. Add water and nonfat dry powdered milk. Cook and stir until thickened and bubbly. Remove from heat.

  4. Gradually stir in 1 cup hot mixture into beaten egg white until blended. Return to remaining hot mixture in skillet. Add wine, shrimps and scallops, stir until bubbly.

  5. Spoon over green beans. Toss bread crumbs and Parmesan cheese together. Sprinkle over the remaining margarine (melted). Bake in 400 degree oven about 10 minutes until brown.
