Shrimp Gumbo 2
Serving suggestion: Besides rice, serve with crackers or rolls, salad and a light dessert.
Ingredients:
1 cup celery, chopped
1 cup green peppers, chopped
1 cup onions, chopped
1 can okra, wash if desired
1 can stewed tomatoes
1 large can tomato juice or vegetable juice
Salt and pepper to taste
1 teaspoon cumin
1 pound shrimp
1 tespoon gumbo file
Directions:
- In a large kettle, place celery, green peppers and onions. Cover with water and cook until tender, about 10 - 15 minutes.
- Add okra, tomatoes, tomato juice, and cumin. Season with salt and pepper to taste. Bring to a boil.
- Add shrimp and cook just until shrimps turn pink. Remove from heat and stir in gumbo file. Serve over steamed rice in soup bowls.
