| Shrimp Creole I Ingredients: 1 pound cooked shrimp 4 tablespoons butter 2 cup canned tomatoes 1 green pepper, minced 2 onions, minced 1/2 cup sliced mushrooms 1/2 cup stock, chicken bouillon cubes 2 tablespoons minced ham 2 tablespoons flour Salt and pepper to taste
Directions: - Cook the tomatoes, pepper, onion and mushrooms for 10 minutes. Add the stock and ham and cook 2 minuteslonger. Thicken with the flour lightly creamed with 2 tablespoons butter. Stir constantly until thick and smooth. Set aside.
- In a frying pan, melt the rest of the butter, add shrimps, season with salt and pepper and cook for about 2-3 minutes.
- Add shrimps to the sauce previously cooked and simmer for 5 minutes. Taste with salt and pepper.
- Serve with boiled rice.
