Shrimp and Rice Salad

Ingredients:
1 cup uncooked rice
6 scallions, sliced
1 pound shrimp, cooked and peeled
1 cup mayonnaise
1/2 teaspoon ground ginger
Juice of 1 lemon
Salt to taste
Toasted sesame seeds
Steamed snow peas

Directions:

  1. Cook rice and let cool.

  2. Add scallions, shrimp, mayonnaise, ginger, lemon juice and salt. Adjust seasonings to taste. Cool in refrigerator several hours if desired.

  3. Serve at room temperature, sprinkled with sesame seeds and surrounded by snow peas on a large platter or shallow bowl. It makes 6 servings.
