Shrimp and Rice Salad
Ingredients:
1 cup uncooked rice
6 scallions, sliced
1 pound shrimp, cooked and peeled
1 cup mayonnaise
1/2 teaspoon ground ginger
Juice of 1 lemon
Salt to taste
Toasted sesame seeds
Steamed snow peas
Directions:
- Cook rice and let cool.
- Add scallions, shrimp, mayonnaise, ginger, lemon juice and salt.
Adjust seasonings to taste. Cool in refrigerator several hours if desired.
- Serve at room temperature, sprinkled with sesame seeds and surrounded by snow peas on a large platter or shallow bowl. It makes 6 servings.
