Seviche Seafood Shells

Seviche (or Ceviche) is a dish originated from Peru. In its classic form, it is composed of raw fish marinated in lemon juice with olive oil, herbs and spices. This variation is prepared with cooked bay scallops. Try out this appetizer.

Ingredients:
1/2 pound bay scallops
1/4 cup fresh lime juice
1/3 cup diced med. bell pepper
1/3 cup thinly sliced green onions
1 tablespoon fresh minced cilantro (it can be substituted for dried)
1 tablespoon olive oil
1/8 tablespoon salt
1/8 tablespoon pepper
3 drops hot sauce
16 cooked jumbo macaroni shells


Directions:

  1. Cook scallops in small amount of boiling water for 1 minute. Drain.

  2. Combine scallops and fresh lime juice in small bowl. Toss well. Cover and refrigerate for 1 hour.

  3. Stir in bell pepper, green onion, cilantro, olive oil, salt, pepper and hot sauce. Cover and chill 30 minutes. Drain.

  4. Stuff each macaroni shell with 1 tablespoon scallop mixture. Arrange on serving platter.
