Sesame-Crusted Salmon

Sesame-crusted Salmon

Yield: 4 Servings

Ingredients:
4 (5 ounces) salmon fillets
8 tablespoons sesame seeds
4 tablespoons black sesame seeds
1 teaspoon sesame oil
4 tablespoons vegetable oil
1 small zucchini, julienned
1 medium red pepper, julienned
4 ounces bean sprouts
7 ounces fresh mushrooms, sliced
1 tablespoon minced fresh ginger
2 clove garlic, chopped
1 small onion, chopped
3 tablespoons light soy sauce
4-6 green onions, chopped
Salt and pepper to taste

Directions:

  1. In a large plate, combine both types of sesame seeds. Season salmon fillets with salt and pepper to taste. Press both sides of the salmon into the sesame seeds to coat.

  2. In a frying pan, heat 2 tablespoons vegetable oil and the sesame oil. Add salmon fillets and cook for 3-4 minutes or until golden brown and cooked through.

  3. While the salmon is cooking, heat in a large skillet the remaining vegetable oil. Add garlic, onion an ginger; sauté until it smells fragrant. Add vegetables and stir-fry for 2-3 minutes or until tender crisp. Stir in soy sauce and green onions. Season to taste with salt and pepper.

  4. Divide vegetables among serving plates. Top with the salmon.
