| Sesame-Crusted Salmon
 Yield: 4 Servings Ingredients: 4 (5 ounces) salmon fillets 8 tablespoons sesame seeds 4 tablespoons black sesame seeds 1 teaspoon sesame oil 4 tablespoons vegetable oil 1 small zucchini, julienned 1 medium red pepper, julienned 4 ounces bean sprouts 7 ounces fresh mushrooms, sliced 1 tablespoon minced fresh ginger 2 clove garlic, chopped 1 small onion, chopped 3 tablespoons light soy sauce 4-6 green onions, chopped Salt and pepper to taste Directions: - In a large plate, combine both types of sesame seeds. Season salmon fillets with salt and pepper to taste. Press both sides of the salmon into the sesame seeds to coat.
- In a frying pan, heat 2 tablespoons vegetable oil and the sesame oil. Add salmon fillets and cook for 3-4 minutes or until golden brown and cooked through.
- While the salmon is cooking, heat in a large skillet the remaining vegetable oil. Add garlic, onion an ginger; sauté until it smells fragrant. Add vegetables and stir-fry for 2-3 minutes or until tender crisp. Stir in soy sauce and green onions. Season to taste with salt and pepper.
- Divide vegetables among serving plates. Top with the salmon.
