Scallops with Tomato

Scallops are served over a tomato sauce, where the flavor is enriched with basil leaves.

Ingredients:
12 scallops
1 clove garlic, crushed
3 shallots, chopped
1 bunch basil, stems removed
4 large tomatoes, peeled, seeded and cubed
6 tablespoons olive oil
2 tablespoons
A pinch of sugar
Salt and pepper to taste


Directions:

  1. Heat 4 tablespoons olive oil in a frying pan, saute garlic and shallot.

  2. Add tomatoes and cook for about 5 minutes. Season with a pinch sugar, salt and pepper. Add basil leaves.

  3. Heat the rest of the oil in a saute pan. Sear scallops, 20 seconds either side. Place scallops over tomatoes.
