| Scallops with Spicy Sauce
 Yield: 4 servings (Appetizer) Ingredients: 12 scallops 2 shallots, chopped 5 dried apricots, chopped 2 tablespoons freshly grated ginger 1 chili, seeded and finely chopped 1/2 cup white wine 1/2 cup whipping cream 4 tablespoons butter 2 tablespoons cooking oil Salt and pepper to taste
Directions: - In a saucepan, add shallots, apricots, ginger, chili and white wine. Bring to a boil, and cook until reduced by half.
- Pour in the whipping cream and simmer for a few more minutes. Whisk in the butter. Keep the sauce warm.
- Heat cooking oil in skillet. Add scallops and cook them for 4-5 minutes or until cooked through. Season to taste with salt and pepper.
- Divide the scallops among 4 plates; spoon the sauce on top and serve.
