Scallops Provencial

Ingredients:
1 1/2 pound scallops
1/2 cup all-purpose flour
2 tablespoons oil
4 tablespoons margarine
1 clove garlic, peeled and finely minced
2 tablespoons fresh lemon juice
1/2 cup parsley, finely minced
Salt and pepper to taste


Directions:

  1. Wash and dry the scallops, then roll scallops in flour.

  2. Heat oil with margarine over medium heat. Saute garlic. Add scallops, stir-fry until firm, white and flecked with brown.

  3. Add lemon juice and parsley. Season with salt and pepper. Stir to blend.

  4. Serve over crisp toast or serve with cooked rice.
