| Salmon with Passion Fruit SauceIf you want a special recipe for salmon, you should try this one. This recipe is also very easy to prepare. Salmon fillets are sautéed and served with a passion fruit sauce. I've served this dish with couscous, but you can also serve it with white rice. Your family and friends will feel like eating in a gourmet restaurant!!!  Yield: 4 Servings Ingredients: 4 (5 ounces each) salmon fillets 1 tablespoon butter Salt and pepper to taste Sauce 4 ounces passion fruit pulp 1/2 cup water 3 tablespoons butter 1 tablespoon lemon juice 1 tablespoon sugar Salt to taste Directions: - Season salmon fillets with salt and pepper. Heat butter in a non-stick pan and saute salmon fillets for 3-4 minutes on each side or just until the fish flakes when tested with a fork.
- Mix the passion fruit pulp and the 1/2 cup water. Pour the passion fruit juice into a small saucepan. Add lemon juice and sugar and bring to a boil under low heat. (Taste the sauce and if it's too sour, add more sugar). Turn heat off and whisk in butter gradually, piece by piece, until incorporated. Lightly season with salt.
- Distribute salmon fillets on serving plates and pour the sauce over them. Serve immediatelly.
