| Red Snapper with Spicy Honey Sauce  Yield: 4 servings Ingredients: 4 (6-7 ounces each) red snapper fillets, skinned and cut in half crosswise 2 tablespoons vegetable oil 8 tablespoons light soy sauce 3 tablespoons honey 2 tablespoons lime juice 1 teaspoon grated lime zest 1 tablespoon grated fresh ginger 1 red chili pepper, seeded and chopped 3 tablespoons black sesame seeds Salt to taste
Directions: - In a small bowl, mix together the soy sauce, hoey, lime juice, lime zest, ginger and chili pepper. Set aside.
- Lightly season red snapper fillets. Heat the vegetable oil in a large non-stick skillet over medium heat. Add red snapper fillets and cook for about 2-3 minutes on each side or until just cooked through.
- On each of 4 dinner plates, arrange two pieces of red snapper fillets, spoon sauce and sprinkle with sesame seeds. Serve with sautéed spinach or with a salad.
