Real Maine Chowder

Ingredients:
3 cups clams, shucked
1/2 pound salt pork, diced
3 cups onions, chopped
4 cups potatoes, chopped
1 cup cream
1 cup milk
Salt to taste
Water


Directions:

  1. In a large saucepan, saute salt pork for 5 minutes or until brown. Take out pieces and drain on paper towels, keep in the saucepan about 2 tablespoons of the fat.

  2. Saute onions in remaining fat until transparent, add potatoes and saute for 2 minutes. Add water enough just to cover potatoes and onions. Bring to boil, lower heat and cook for 20 minutes or until potatoes are almost tender.

  3. Add clams, bring to boil, lower heat and cook for 5 to 10 minutes. Remove from heat.

  4. Add milk and cream, salt and pepper to taste. Serve immediately and use salt pork for garnish.
