| Penne with Smoked Salmon and Vodka Sauce  Yield: 4 Servings Ingredients: 14 ounces dry penne pasta 3 tablespoons olive oil 2 shallots, thinly sliced 4 large tomatoes, seeded and chopped 1 cup whipping cream 1 pinch ground nutmeg 2 tablespoons fresh dill, chopped 1/3 cup vodka 8 ounces smoked salmon, cut into strips Salt and white pepper to taste Dill sprigs, for garnish Directions: - Cook pasta until al dente and drain well.
- Heat oil in a wide frying pan over medium-low heat. Add shallot and cook, stirring often, until soft but not brown.
- Stir in chopped tomatoes, cover and simmer for 5 minutes.
- Add cream, nutmeg, chopped dill and vodka. Increase heat to high and bring to a full boil. Boil for 1 minute.
- Add pasta to sauce and mix lightly, until pasta is well coated. Remove from heat, add salmon and mix lightly. Season to taste with salt and white pepper.
- Garnish with dill springs and serve.
