Penne with Smoked Salmon and Vodka Sauce

Penne with Smoked Salmon and Vodka Sauce

Yield: 4 Servings

Ingredients:
14 ounces dry penne pasta
3 tablespoons olive oil
2 shallots, thinly sliced
4 large tomatoes, seeded and chopped
1 cup whipping cream
1 pinch ground nutmeg
2 tablespoons fresh dill, chopped
1/3 cup vodka
8 ounces smoked salmon, cut into strips
Salt and white pepper to taste
Dill sprigs, for garnish

Directions:

  1. Cook pasta until al dente and drain well.

  2. Heat oil in a wide frying pan over medium-low heat. Add shallot and cook, stirring often, until soft but not brown.

  3. Stir in chopped tomatoes, cover and simmer for 5 minutes.

  4. Add cream, nutmeg, chopped dill and vodka. Increase heat to high and bring to a full boil. Boil for 1 minute.

  5. Add pasta to sauce and mix lightly, until pasta is well coated. Remove from heat, add salmon and mix lightly. Season to taste with salt and white pepper.

  6. Garnish with dill springs and serve.
