New England Clam Chowder III

A variation of New England clam chowder recipe

Ingredients:
2-3 cans clams
1 cup onions, finely diced
1 cup celery, finely diced
2 cups potatoes, diced
3/4 cup butter (or margarine)
3/4 cup flour
1 qt. half and half
1/2 tablespoon salt
2 tablespoons wine vinegar
Pepper to taste


Directions:

  1. Drain juice from clams. Put juice in pot with vegetables. Add water until barely covers vegetables. Simmer on medium heat until vegetables barely tender.

  2. In a separate pan, melt butter. Add flour, stirring constantly, until smooth. Add half and half, stir with wire whip until thick and smooth.

  3. Pour into vegetables mixture and add clams.

  4. Add salt, pepper and vinegar after heated through. Serve immediately.
