| New England Clam Chowder III A variation of New England clam chowder recipe Ingredients: 2-3 cans clams 1 cup onions, finely diced 1 cup celery, finely diced 2 cups potatoes, diced 3/4 cup butter (or margarine) 3/4 cup flour 1 qt. half and half 1/2 tablespoon salt 2 tablespoons wine vinegar Pepper to taste
Directions: - Drain juice from clams. Put juice in pot with vegetables. Add water until barely covers vegetables. Simmer on medium heat until vegetables barely tender.
- In a separate pan, melt butter. Add flour, stirring constantly, until smooth. Add half and half, stir with wire whip until thick and smooth.
- Pour into vegetables mixture and add clams.
- Add salt, pepper and vinegar after heated through. Serve immediately.
