Ingredients:
2 pounds mussels
3 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
2 tablespoons fresh chopped thyme
3/4 cup red wine
1 (28 ounce) can peeled and diced tomatoes
2 tablespoons fresh chopped parsley
salt and pepper to taste
Directions:
- Scrub mussels, removing beards. Discard any broken or that are not closed. Put mussels in a large saucepan (only with their
own water), cook covered over high heat until all mussels open up (shake the pan occasionally). Discard any unopened mussels.
Strain the mussels, reserving the liquid. Set aside.
- In a large saucepan, heat olive oil and saute onions under low heat for 6-8 minutes, until onions get soft but not burnt.
Stir in garlic and thyme for 1 minute. Pour red wine and cook for another 5 minutes. Add tomatoes and mussels reserved liquid,
put the lid and simmer for 30 minutes. Remove lid and let another 15 minutes simmer.
- Add mussels, let cook 5 minutes. Taste with salt and pepper. Sprinkle with parsley.
- Serve with bread.
