| Mexican Shrimp
Yield: 4-6 Servings Ingredients: 1.5 pound shrimp, peeled and deveined 2 tablespoons olive oil 1 tablespoon chopped garlic 2 regular cans of diced tomatoes with green chiles 2 cups mozzarella cheese Salt to taste
Directions: - Fry shrimp with garlic in olive oil until shrimp turns pink.
- Drain cans of tomatoes and add to skillet. Bring to boil.
- Turn down heat and add cheese. Season with salt to taste. Serve when cheese melts.
