Lobster Risotto with White Wine, Mustard and Passion Fruit

Ingredients:
1 pound lobster tail
5 ounces mushrooms, sliced
1/2 cup dry white wine
3 tablespoons mustard
3 tablespoons olive oil
3 cloves garlic, finely minced
1/2 meddium onion, chopped
2 cups risotto rice (Arborio,Carnaroli)
1/2 cup passion fruit juice
1/2 cup grated Parmesan cheese
salt and pepper to taste


Directions:

  1. Heat olive oil, saute garlic and onion until brown. Add lobster, cook for 3 minutes, stirring constantly. Add salt, pepper, wine, mustard, passion fruit juice and mashrooms. When boil, reduce heat to low, put the lid on and cook for 10 minutes.

  2. Add rice and 2 1/2 cups of water. Cook partially covered until water has almost evaporated.

  3. Add Parmesan cheese, cover and serve after 5 minutes.
