Lo Mein Shrimp

A Chinese shrimp recipe that combines shrimps, some vegetables and noodle. To be served as main dish

Ingredients:
4 tablespoons peanut oil
1/2 pound shrimp
2 carrots, shredded
2 slices fresh ginger, minced
1 cup cabbage
1 green onion, minced
2 teaspoons cornstarch
1/2 pound chinese noodle
1/2 teaspoon sugar
1 tablespoon light soy sauce
1/2 teaspoon salt

Directions:

  1. Cook noodle as directed on package. Drain, rinse in cold water, add a few drops oil and mix to keep from sticking. Set aside.

  2. Mix together shrimp, ginger, green onion, cornstarch, sugar, light soy. Set aside to marinate.

  3. Heat wok to smoking, add 2 tablespoons oil. Stir fry shrimp mixture two minutes, do not overcook, Reserve.

  4. Heat 2 tablespoons oil, stir fry carrots and cabbage two minutes.

  5. Add noodle, stir well and cook a few minutes.

  6. Add shrimp mixture, 1 tablespoon soy and salt. Stir a minute to heat and serve.
