Linguine with Smoked Salmon and Arugula
Combined with arugula and olive oil, this linguine with smoked salmon is a lighter option to smoked salmon pasta with cream sauce.
Yield: 4 First-course Servings
Ingredients:
13 ounces linguine, cooked al dente and drained
2 tablespoons olive oil
2 garlic cloves, finely chopped
5 ounces smoked salmon, cut into thin strips
2 ounces arugula, cleaned
Salt and pepper to taste
Directions:
- In a skillet, heat olive oil. Add garlic and saute for 1 minute, stirring constantly.
- Add smoked salmon and arugula; stir for 1 minute. Add linguine and toss to coat. Season to taste with salt and pepper.
- Divide pasta among 4 plates and serve.
