| Halibut with Mushroom
 Yield: 4 Servings Ingredients: 1 large onion, sliced thinly 1 tablespoon oil 1 1/2 cup mushrooms, sliced thinly 1 pound halibut fillets 1 stack celery, sliced thinly 2 tablespoons soy sauce 3 tablespoons dry sherry Salt and pepper to taste
Directions: - In a non-stick skillet, heat oil and saute onion.
- Add mushrooms and celery and saute about 2 minutes, stirring constantly.
- Spread halibut fillets on mushrooms; sprinkle with salt and pepper. Add soy sauce and sherry. Cook gently, covered, for about 5-7 minutes or until fish flakes easily.
