Gumbo Recipes 
Gumbo is a thick, spicy and flavorful soup or stew that is normally served over a bowl of white rice. Gumbo has its origins in Louisiana and it is very popular in the Southern parts of the United States and in the Gulf Coast of the United States. A gumbo recipe may contain different kinds of seafood, poultry, sausage (often it combines several varieties), vegetables like bell pepper, celery, onions, and tomatoes. To thicken the gumbo, okra, roux (a mixture of flour and some fat, mostly butter or oil), or filé powder - also called gumbo file (dried and powdered sassafras leaves) can be used. Just pay attention when preparing a gumbo recipe with filé powder to add it only at the end of cooking, because if allowed to boil, it will become stringy and unappetizing. A good idea is to pass the filé powder at the table, so each one can sprinkle it on the gumbo.
