| Grilled Scallops Yield: 4 Servings Ingredients: 16 large sea scallops 3 tablespoons olive oil Grated peel of 1 lemon 2 tablespoons chopped fresh basil 2 tablespoons chopped chives 1 clove garlic, chopped Salt and pepper to taste 4 bamboo skewers, soaked in water for 30 minutes
Directions: - In a bowl, mix all the ingredients, then add the scallops mixing all together. Cover with plastic wrap and marinade for 2 hours.
- Thread scallops onto skewers, then cook on preheated grill for about 2 minutes per side or until scallops turn opaque. Remove from grill.
- Gasnish with lemon slices and basil leaves.
