Grilled Salmon with Lemon and Thyme

You can serve these grilled salmon fillets with sauteed zucchini. Another great variation is to prepare a mixture with butter, lemon and thyme, and brush thick zucchini slices, then grill them.

Yield: 10 Servings

Ingredients:
4 pounds salmon fillet, skinned
3 tablespoons cognac
1/4 cup lemon peel, minced
2 tablespoons shallot, minced
1 1/2 tablespoon kosher salt
1 1/2 tablespoon browm sugar
1 tablespoon fresh thyme, minced
3/4 teaspoon pepper

Directions:

  1. Place salmon fillets on heavy large baking sheet. Rub cognac over both sides of fish.

  2. Mix together all remaining ingredients in small bowl. Rub over both sides of fish. Cover with plastic wrap. Top with another baking sheet. Refrigerate at least 6 hours or overnight.

  3. Prepare barbecue (medium-high heat). Grill fish until cooked through, about 3 minutes per side. Transfer to plates and serve.
