Grilled Salmon Steaks with Fresh Tomatoes

Yield: 4 Servings

Ingredients:
4 (7-8 ounces each) salmon steaks
1/2 cup olives, chopped
4 large fresh tomatoes, chopped
1 medium onion, chopped
1 tablespoon olive oil
1 tablespoon fresh cilantro, finely chopped
1 teaspoon minced garlic
1/2 teaspoon lemon juice
Salt and pepper to taste

Directions:

  1. In a medium bowl, combine olives, tomatoes, onion, cilantro, oil and garlic. Season to taste with salt and pepper. Mix well and set aside.

  2. Grill salmon over medium hot coals until fish flakes when tested with a fork.

  3. Serve salmon steaks with tomatoes mixture. Garnish with cilantro if desired.
