| Grilled Salmon Steaks with Fresh Tomatoes
Yield: 4 Servings Ingredients: 4 (7-8 ounces each) salmon steaks 1/2 cup olives, chopped 4 large fresh tomatoes, chopped 1 medium onion, chopped 1 tablespoon olive oil 1 tablespoon fresh cilantro, finely chopped 1 teaspoon minced garlic 1/2 teaspoon lemon juice Salt and pepper to taste Directions: - In a medium bowl, combine olives, tomatoes, onion, cilantro, oil and garlic. Season to taste with salt and pepper. Mix well and set aside.
- Grill salmon over medium hot coals until fish flakes when tested with a fork.
- Serve salmon steaks with tomatoes mixture. Garnish with cilantro if desired.
