Grilled Gemfish In Chermoula Marinade

The longer you marinate the fish, tastier it will be when you grill it. So, preferablylet the fish marinate overnight in the refrigerator.

Ingredients:
2 pounds gemfish (or firm white fish)
1/2 bunch of fresh parsley
1/2 bunch fresh coriander
3 large cloves garlic
1/2 tablespoon paprika
1/2 tablespoon cumin
1 teaspoon coriander
1 pinch cayenne pepper
2 1/2 ounces lemon juice
3 ounces olive oil

Directions:

  1. In food processor, process fresh coriander, parsley, 3 large cloves of garlic, paprika, cumin, coriander, cayenne, lemon juice and olive oil.

  2. Marinate gemfish in this mixture for at least one hour, but preferably overnight.

  3. Remove fillets from marinade, place in griller or barbeque, basting in marinate while cooking. Cook 2-3 minutes each side, turning carefully only once.
