Flounder and Cheese Chowder
Ingredients:
1 pound flounder, cut in 1 inch cubes
2 tablespoons butter
6 tablespoons chopped onion
1 cup diced carrots
6 tablespoons chopped celery
1/2 cup flour
1/2 teaspoon salt
Dash of paprika
2 (10 ounces) cans chicken broth, undiluted
3 cups milk
1 cup grated processed cheese
Directions:
- Melt butter in large saucepan. Add onion, carrots and celery. Cook until onion is transparent.
- Blend flour, salt and paprika. Cook 1 minute, stirring constantly.
- Gradually add chicken broth and milk. Cook, stirring constantly until thickened.
- Add fish, simmer until fish flakes easily (5 minutes for fresh, 10 minutes for frozen).
- Add cheese and stir until melted. Serve hot.
