Flounder and Cheese Chowder

Ingredients:
1 pound flounder, cut in 1 inch cubes
2 tablespoons butter
6 tablespoons chopped onion
1 cup diced carrots
6 tablespoons chopped celery
1/2 cup flour
1/2 teaspoon salt
Dash of paprika
2 (10 ounces) cans chicken broth, undiluted
3 cups milk
1 cup grated processed cheese

Directions:

  1. Melt butter in large saucepan. Add onion, carrots and celery. Cook until onion is transparent.

  2. Blend flour, salt and paprika. Cook 1 minute, stirring constantly.

  3. Gradually add chicken broth and milk. Cook, stirring constantly until thickened.

  4. Add fish, simmer until fish flakes easily (5 minutes for fresh, 10 minutes for frozen).

  5. Add cheese and stir until melted. Serve hot.
