| Fish with Pine Nuts  Yield: 4-6 Servings Ingredients: 1 pound white fish fillets 3-4 tablespoons all purpose flour 4 dry Chinese mushrooms 3 tablespoons vegetable oil 2 tablespoons fine chopped fresh ginger 1 tablespoon scallions, chopped 1 green bell pepper, cubed 1 red bell pepper, cubed 1 ounce canned bamboo shoots, chopped 2 tablespoons rice wine 3 tablespoons pine nuts, toasted Salt and pepper to taste Directions: - Soak dry mushrooms in warm water for 20 minutes or until soft; squeeze out the water and cut mushrooms into strips.
- Season fish fillets with salt and pepper to taste. Cut fish fillets into serving-sized pieces; Roll fish pieces in the flour.
- Heat 2 tablespoons in skillet over medium heat. Add fish pieces, a few at a time, and cook until fish flakes easily with fork; turning carefully. Remove with a slotted spoon and drain.
- Heat the rest of the oil in a clean skillet and saute ginger. Add scallions, bell peppers, bamboo shoots, mushrooms and rice wine. Cook for about 2-3 minutes, stirring once in a while.
- Return the fish pieces to the skillet and cook stirring constantly for a further 2-3 minutes or until fish pieces are thoroughly heated. Season with salt and pepper to taste. Sprinkle with pine nuts and serve immediately.
