| Fish Piccata  Yield: 4 servings Ingredients: 2 medium-large (or 4 small) white fish fillets, cut into half 3 tablespoons all-purpose flour 3 tablespoons butter 1 tablespoons olive oil 1/4 cup dry white wine 2 tablespoons fresh lemon juice 2 tablespoons capers, drained and rinsed 3 tablespoons chopped fresh parsley Salt and freshly ground pepper to taste Directions: - Season fish fillets to taste with salt and pepper. Dredge the fish fillets lightly in flour.
- Heat olive oil and butter in skillet over medium-high heat. Add fish fillets and sauté until golden brown on both sides. Remove fish fillets from pan and keep warm.
- Add white wine, lemon juice and capers to the skillet, scraping up any browned bits. Cook for 1-2 minutes. Add parsley and remove from heat.
- Place fish fillets on plates and pour sauce over. Serve with pasta or rice.
