Fish Piccata

Fish Piccata

Yield: 4 servings

Ingredients:
2 medium-large (or 4 small) white fish fillets, cut into half
3 tablespoons all-purpose flour
3 tablespoons butter
1 tablespoons olive oil
1/4 cup dry white wine
2 tablespoons fresh lemon juice
2 tablespoons capers, drained and rinsed
3 tablespoons chopped fresh parsley
Salt and freshly ground pepper to taste

Directions:

  1. Season fish fillets to taste with salt and pepper. Dredge the fish fillets lightly in flour.

  2. Heat olive oil and butter in skillet over medium-high heat. Add fish fillets and sauté until golden brown on both sides. Remove fish fillets from pan and keep warm.

  3. Add white wine, lemon juice and capers to the skillet, scraping up any browned bits. Cook for 1-2 minutes. Add parsley and remove from heat.

  4. Place fish fillets on plates and pour sauce over. Serve with pasta or rice.
