Fish Chowder Recipe

Ingredients:
3 large potatoes, cubed
1 large onion, chopped
3 tablespoons oil
1 (16 ounces) can tomatoes, squeezed
1/2 green pepper, diced
3 large stems celery, cut in 1/2 inch pieces
2 tablespoons lemon juice
1 or 2 cloves garlic, pressed or chopped
2 tablespoons Worcestershire sauce
2 pounds cod, haddock or flounder, cubed
2 teaspoons salt
1/2 teaspoon red pepper flakes
1 tablespoon sugar
1/4 teaspoon black pepper

Directions:

  1. Cook potatoes, drain and save water. Set aside.

  2. Saute onions in oil until clear. Add tomatoes, green pepper, celery, lemon juice, garlic, Worcestershire sauce, salt, red pepper flakes, sugar and black pepper. Simmer until celery is almost tender

  3. The above can be prepared ahead. 1/2 hour before serving, heat the tomato mixture, add the potatoes. Bring to a slow boil; add fish, stir to mix and simmer until fish is done. Do not overstir. Serve immediately.
