Fettuccine with Anchovies and Spinach

Fettuccine with Anchovies and Spinach

Yield: 4 servings

Ingredients:
1 pound fettuccine
2 pounds spinach, washed and thick stems discarded
4 tablespoons olive oil
4 tablespoons pine nuts, toasted
4 garlic cloves, finely chopped
12 salted anchovie fillets, roughly chopped
Salt and freshly grated pepper to taste

Directions:

  1. Cook the pasta according to package directions. Drain it and reserve.

  2. Heat olive oil in a large skillet over medium-high heat. Add the garlic and saute until the garlic begins to turn golden brown.

  3. Add the spinach to the pan and saute, stirring constantly, until it's wilted. Add anchovies and cook, stirring occasionally, for about a minute.

  4. Add pasta to the pan and toss well to coat. Season to taste with salt and freshly grated pepper. Sprinkle with toasted pine nuts and serve.
