Easy Mussels

Easy Mussels

Yield: 4 Servings

Ingredients:
2 pounds fresh mussels
1 tablespoon butter
Lemon juice and salt to taste
2 garlic cloves, minced

Directions:

  1. Discard mussels that are already opened.

  2. Put a little water in a big pot and bring to a boil. Dump in the mussels, salt and cook until mussels open.

  3. Remove mussels from heat and start pulling them from their shells.

  4. In a bowl melt the butter and garlic in the microwave for 45 secs. Pour over mussels and squeeze lemon juice.
