Eastern Shore Clam Chowder

A spicy clam chowder recipe

Ingredients:
1 1/2 cup chopped clams
3 strips bacon
1 medium onion, chopped
2 stalks celery, chopped
6 medium potatoes, peeled and diced
1 tablespoon green pepper, chopped
2 small tomatoes, chopped
3 cups water
2 tablespoons white wine
1 bay leaf
1 tablespoon thyme
1 tablespoon basil
1 clove garlic, chopped
1/4 tablespoon red pepper flakes
6 small peppercorns
1 pinch cayenne pepper
1 tablespoon salt
fresh parsley to garnish


Directions:

  1. Cut bacon into strips, saute them in a saucepan. Saute onion, celery, green pepper and tomatoes.

  2. Add water, potatoes, bay leaf and salt. Bring to boil, cover and reduce heat to low. Cook until potatoes are tender.

  3. Add clams with liquid, thyme, basil, garlic, cayenne, red pepper flakes and peppercorns. Simmer about 5 minutes.

  4. Add wine and serve garnished with fresh parsley.
