| Eastern Shore Clam Chowder
Ingredients: 1 1/2 cup chopped clams 3 strips bacon 1 medium onion, chopped 2 stalks celery, chopped 6 medium potatoes, peeled and diced 1 tablespoon green pepper, chopped 2 small tomatoes, chopped 3 cups water 2 tablespoons white wine 1 bay leaf 1 tablespoon thyme 1 tablespoon basil 1 clove garlic, chopped 1/4 tablespoon red pepper flakes 6 small peppercorns 1 pinch cayenne pepper 1 tablespoon salt Fresh parsley to garnish
Directions: - Cut bacon into strips, saute them in a saucepan. Saute onion, celery, green pepper and tomatoes.
- Add water, potatoes, bay leaf and salt. Bring to boil, cover and reduce heat to low. Cook until potatoes are tender.
- Add clams with liquid, thyme, basil, garlic, cayenne, red pepper flakes and peppercorns. Simmer about 5 minutes.
- Add wine and serve garnished with fresh parsley.
