| Creole Seafood Gumbo This recipe is a specialty of New Orleans cuisine. Gumbo is a spicy, hearty stew that contain shrimps, crab meat, okra and other vegetables. It is served with rice Ingredients: 1/4 cup butter (or margarine) 1 small green bell pepper, chopped 2 tablespoons all-purpose flour 1 teaspoon Tabasco sauce 2 cups water (or seafood juice) 1/8 teaspoon thyme 2 cups okra 1 bay leave 2 cups tomatoes, peeled and cubed 2 cups shrimp and crabmeat 1 large onion, chopped 3 cups hot cooked rice Salt to taste
Directions:
- In a large saucepan, melt butter. Blend in flour and cook over low heat, stirring constantly, until dark brown.
- Add liquid, okra, tomatoes, onion, pepper, Tabasco, thyme and bay leaf. Bring to a boil, then cover and simmer 30 minutes, stirring frequently.
- Add seafood and cook, covered, 10 to 15 minutes longer. Season with salt.
- Remove bay leaf and serve in soup bowls with mound of hot rice in center.
