| Creamy Orange Soup with Scallops
 Yield: 4 servings Ingredients: Juice of 2 oranges Grated zest of 1 orange 1 cup whipping cream 2 tablespoons butter 16 scallops 1 pinch sugar Salt and white pepper to taste
Directions: - In a saucepan, add the orange juice and orange zest. Cook until reduced by half.
- Pour in the whipping cream and sugar; simmer for a few more minutes. Season to taste with salt and pepper.
- Melt butter in skillet. Add scallops and cook them for 4-5 minutes or until cooked through. Season to taste with salt and pepper.
- Divide the scallops among 4 soup plates, and then ladle the soup on top. Serve immediately.
