| Crab Tetrazzini  Yield: 4 servings Ingredients: 2 cups cooked fettuccine 1/2 pound crabmeat 2 cups mushrooms, sliced 1/2 teaspoon dried basil 3 tablespoons butter 1 tablespoon all-purpose flour 1/2 teaspoon garlic powder 3/4 cup chicken broth 1/3 cup green onion, sliced 1/4 cup dry white wine 1/3 cup fresh parsley, chopped 1/4 cup grated Parmesan cheese Salt to taste
Directions: - Preheat oven to 400F degrees.
- Place fettucine in a greased 1-quart casserole.
- Melt 2 tablespoons butter in large skillet. Add mushrooms and saute until tender. Add garlic, green onion, parsley and basil and saute for about 1-2 minutes. Season to taste with salt.
- Spoon mixture over fettucine. Arrange crabmeat on vegetables.
- Melt remaining butter in skillet; blend in flour. Gradually add chicken broth and cook, stirring constantly, until smooth and thickened. Blend in wine. Add Parmesan cheese; cook until cheese melts. Season to taste with salt.
- Spoon sauce over crab. Bake 15 to 20 minutes. Serve immediately.
