Crab Stuffed Mushrooms

Crab Stuffed Mushrooms

Yield: 24 appetizers or 6 main course servings

Ingredients:
24 large fresh mushrooms, stems removed
2 tablespoons butter
4 green onions, chopped
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon Cayenne pepper
2 tablespoons dry bread crumbs
4 tablespoons heavy whipping cream
2 cups crabmeat
Freshly grated Parmesan cheese

Directions:

  1. Rinse the mushrooms, remove stems and finely choppe them. Steam mushroom caps for 5 minutes. Set aside.

  2. In a saucepan, heat butter, add chopped mushrooms stems, green onions and garlic. Cook for 8-10 minutes or until the liquid is almost all evaporated. Add salt, Cayenne pepper, bread crumbs, whipping cream and crab meat mixing all together.

  3. Fill the mushroom caps with the mixture and top each with Parmesan cheese. Bake for 10-12 minutes at 375F, until lightly brown.
