| Crab Meat with Cheese and SherryA cajun crab recipe that combines crab meat with vegetables, cheese and Sherry. Serve it as appetizer Ingredients: 1 pound white crab meat 1 stick butter or margarine 1 bunch chopped green onion 1/2 cup parsley, finely chopped 1/2 cup celery, finely chopped 1 cup (small) mushrooms, drained 3 tablespoons flour 2 cups light cream 2 cups Swiss cheese, grated 1/2 cup dry Sherry or vermouth 1 pinch Cayenne pepper Salt to taste
Directions: - Melt butter in a heavy saucepot. Saute vegetables until soft. Blend in flour and add cream. Heat until thickened.
- Add cheese and heat until it has melted. Add wine, cayenne pepper, and salt. Fold in crab meat. Heat gently for 8 to 10 minutes.
- Serve with french bread.
