Crab Meat with Cheese and Sherry

A cajun crab recipe that combines crab meat with vegetables, cheese and Sherry. Serve it as appetizer

Ingredients:
1 pound white crab meat
1 stick butter or margarine
1 bunch chopped green onion
1/2 cup parsley, finely chopped
1/2 cup celery, finely chopped
1 cup (small) mushrooms, drained
3 tablespoons flour
2 cups light cream
2 cups Swiss cheese, grated
1/2 cup dry Sherry or vermouth
1 pinch Cayenne pepper
Salt, to taste


Directions:

  1. Melt butter in a heavy saucepot. Saute vegetables until soft. Blend in flour and add cream. Heat until thickened.

  2. Add cheese and heat until it has melted. Add wine, cayenne pepper, and salt. Fold in crab meat. Heat gently for 8 to 10 minutes.

  3. Serve with french bread.
