Cold, Green Vegetable Soup with Fish
Ingredients:
1 large cucumber, peeled, halved, seeded and diced
1 1/2 pound fresh spinach leaves, washed
6 tablespoons fresh lemon juice
1 1/2 pound fresh sorrel leaves
3 tablespoons fresh horseradish root, grated
1 teaspoon salt
3/4 teaspoon sugar
1/2 pound crabmeat
1 1/2 pound poached sturgeon (OR whitefish), cut in 1" pieces
1 cup scallions, sliced
1/4 cup onion, chopped
1 garlic clove, minced
2 ounces vodka
1 1/2 quart beer
Directions:
- Boil 3 quarts of water in a large pan. When boiling, briskly add the spinach and the sorrel. Cook uncovered at a brisk boil for 6-8
minutes.
- Drain water off, wash vegetables in cold water, then puree
in blender. Cool to room temperature.
- Combine the other ingredients in bowl, except for the beer and vodka.
- When mixed well slowly add the beer and the vodka stirring constantly. Chill for a minimum of 2 hours before serving.
