| Cod with Coconut Sauce  Yield: 4 servings Ingredients: 1 pound cod fillet, cut into 1-inch pieces 2 tablespoons lime juice 1 teaspoon grated lime zest 2 tablespoons vegetable oil 2 teaspoons cornstarch 2 garlic cloves, minced 1 1/2 cups coconut milk 12 cherry tomatoes, halved 10 ounces fresh spinach leaves, washed Salt and pepper to taste Fresh cilantro leaves for garnish Directions: - Season cod to taste with salt and pepper; sprinkle with cornstarch.
- Heat oil in a wok or large pan over medium heat. Add cod pieces and sauté for 3-4 minutes. Remove cod from wok.
- Add garlic and sauté for 1 minute. Add coconut milk, lime juice and lime zest and bing to a boil. Simmer for 5-6 minutes.
- Return cod pieces to wok. Add cherry tomatoes and spinach leaves; cook for 2 minutes. Taste and correct seasonings if necessary.
- Garnish with cilantro leaves.
